The other day I was working in my garden and I starting picking green tomatoes so that I could fry them. When I was finished, I realized I had a ton of green cherry tomatoes in addition to some big green tomatoes so I decided I was going to have to make fried green tomatoes casserole-style instead of the traditional fried slices. I came up with this. It is amazing! My husband who hates tomatoes loved it and said he could eat the whole thing for breakfast, lunch, or dinner! I have to admit, I could too! It is great for a main dish or side dish.
