fried cabbage with sausage
This is such a fast and easy dish to make for dinner, especially if I've been gone all afternoon. And it is very filling and pretty healthy, especially with the organic coconut oil. I make this often, nearly every week. When we've traveled to visit family & I've made this, everyone loves it & wants the this easy recipe!

Ingredients
- 1/2 cup or 1/3 cup if desired coconut oil or 1 stick butter
- 1 bag very large (32 oz)or 2 small bags slaw mix (14-16 oz each)
- 1 pound smoked sausage, sliced into round pieces
- 1 can 15 ounce diced tomatoes or rotel tomatoes (my favorite)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 medium onion, chopped
How To Make fried cabbage with sausage

Step 1Melt coconut oil OR butter in large skillet. Add cabbage, onion, and cook on medium high for about 5 minutes, stirring to keep from sticking to pan.

Step 2Add remaining ingredients, cover and simmer for 20-25 minutes. I stir mine every 10 minutes or so but it is not necessary.

Step 3We love this and usually eat it all between the 2 of us, but it could be up to 8 servings as a side dish. Only 4 g net carbs per serving.
