Fried Cabbage with Sausage
1/2 cor 1/3 cup if desired coconut oil or 1 stick butter
1 bag(s)very large (32 oz)or 2 small bags slaw mix (14-16 oz each)
1 lbsmoked sausage, sliced into round pieces
1 can(s)15 ounce diced tomatoes or rotel tomatoes (my favorite)
1 mediumonion, chopped
How to Make Fried Cabbage with Sausage
- Melt coconut oil OR butter in large skillet. Add cabbage, onion, and cook on medium high for about 5 minutes, stirring to keep from sticking to pan.
- Add remaining ingredients, cover and simmer for 20-25 minutes. I stir mine every 10 minutes or so but it is not necessary.
- We love this and usually eat it all between the 2 of us, but it could be up to 8 servings as a side dish. Only 4 g net carbs per serving.
