This is how I cook fresh beans and peas. A very good friend of mine, Addie, told me the secret of cooking vegetables. When cooking vegetables, remember to start anything that grows under the ground in cold water (potatoes, carrots, beets, turnips, etc.). Anything that is grown above the ground is started in boiling water (peas, butter beans, and greens. I miss you Addie.

Ingredients

  • 1/4 cup wesson oil
  • 3 slices chopped bacon
  • 6 cups water
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon tony chachere's seasoning
  • 4 cups peas, fresh or frozen

How To Make fresh peas

  • Step 1
    Put oil in bottom of saucepan to cover. Heat. Chop uncooked bacon into small pieces. Place in warm oil for a few minutes, just long enough to braise them.
  • Step 2
    Then add the water and seasonings. Bring to a boil. Add peas to the boiling water. Return the water to a boil. Boil a few minutes, then lower heat to simmer. Cook on simmer until tender.
