If you love everything fresh, avoiding canned cream soups and veggies, this fresh green bean casserole is for you. The homemade cream soup makes the side dish very creamy. It's full of smoky bacon and chopped baby Bella mushrooms. Fresh green beans are sturdy and hold up well in the baking process. The breading on top adds an extra layer of flavor and a nice crunch. We loved the sprinkle of sliced almonds on top. They're almost sweet next to the savory casserole. A classic holiday side dish freshened up.

Ingredients

  • 1 pound fresh blanched green beans
  • 4 slices bacon, diced
  • 1/2 large sweet onion, large diced
  • 1 pint baby Bella mushrooms
  • 1 cup fresh grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 cups fresh turkey or chicken stock
  • 1 cup milk or heavy cream
  • 1/2 teaspoon granulated garlic
  • 2 teaspoons Mrs. Dash original blend
  • pinch salt
  • TOPPING
  • 1 cup Panko bread crumbs
  • 3 slices bacon, chopped
  • 1/2 cup grated Parmesan cheese
  • - slivered almonds, for garnish
  • - spray oil

How To Make fresh green bean casserole

  • Prep fresh green beans.
    Step 1
    I buy fresh frozen blanched green beans and put them in the microwave for 8 minutes in a deep bowl to thaw. If desired, cut beans into thirds once thawed. If buying fresh green beans, trim the ends and submerge them in boiling water for 3 - 4 minutes.
  • Submerge blanched green beans in an ice bath.
    Step 2
    Remove fresh green beans from the boiling water and submerge them in ice water. Once cooled, drain and set aside.
  • Onions and bacon in a skillet.
    Step 3
    Rough chop 1/2 onion and 4 slices of thick bacon and brown in a large skillet.
  • Slice mushrooms and grate Parmesan cheese.
    Step 4
    While that is browning, slice mushrooms and grate Parmesan.
  • Mix bacon, Parmesan cheese, and Panko crumbs for the topping.
    Step 5
    Mix the topping ingredients - bacon, Parmesan, and Panko. Set aside. Preheat oven to 375 degrees F.
  • Add more fat to the bacon and onions if needed.
    Step 6
    Add more bacon fat, olive oil, or butter to the bacon and onions if needed.
  • Add seasonings and flour.
    Step 7
    When bacon and onions are browned, add 1/2 cup of flour to make a paste. Add Mrs. Dash and granulated garlic. Let this roux cook for a few minutes.
  • Slowly add stock and milk.
    Step 8
    Slowly pour in turkey/chicken stock and milk.
  • Stir to remove lumps.
    Step 9
    Stir to remove all lumps.
  • Add mushrooms and Parmesan cheese.
    Step 10
    Now add mushrooms and 1 cup of Parmesan to the sauce.
  • Fold in green beans.
    Step 11
    Fold in blanched green beans.
  • Add to a baking dish, sprinkle topping, and bake.
    Step 12
    Spray a 9x13 baking dish with non-stick spray and pour bean mixture into it. Pat down the mixture as well as possible. Now top with raw bacon/Panko/Parmesan toppings. Spray with oil. Bake in a 375 degree F oven uncovered for 35 minutes.
  • Sprinkle slivered almonds if desired.
    Step 13
    Allow to cool for 10-15 minutes before serving. Garnish with slivered almonds. You could also put the slivered almonds in the dish. Just add to the pan with the green beans and sauce.
