fennel salad with clementines
I love clementines and when paired with the aromatic taste of the fennel you end up with such a refreshing salad. Serve with or without a nice vinaigrette. Also delicious piled on grilled chicken breast but leave the romaine lettuce out of the recipe.

Ingredients
- 1 medium fennel bulb, julienne sliced
- 4 small clementines, peeled and sectioned
- 1 medium tomato, diced
- 1/2 small red onion, julienne sliced
- 1 - avocado, diced
- 1 - celery stalk, julienne sliced
- 1 - cucumber,julienne sliced
- 1/4 bunch cilantro, fresh, chopped
- 1/4 bunch parsley, chopped
- 2 cups romaine lettuce leaves, chopped
- OPTIONAL
- 1/4 cup pinenuts or dried cranberries
