Ingredients
- 14 ounces enoki mushrooms
- 2 tablespoons peanut oil
- 4 cloves garlic minced
- 3 tablespoons soy sauce
- 1 teaspoon sugar
- 2 scallions finely chopped
How To Make enoki mushrooms with garlic and scallions

Step 1cut the 1 inch root off the bottom of the Enoki mushrooms. Gently pull them apart while rinsing them. Place a large wok or pot with water on stove. Bring to a boil. Add the enoki and blanch for about 1 minutes. Drain and set on serving dish

Step 2In a small saucepan add the oil over medium high heat. Add the oil then the garlic and saute about 10 seconds. Add the soy sauce, sugar, and scallions. Bring back to a boil and then remove from heat and pour over the enoki mushrooms Serve immediately
