My grandparents grew up in the 1920's during the depression.Grandma Emma was a farmer who was a Missouri Farm Wife of the year. She canned and froze everything we didn't use after our harvest. She didn't write a lot of her recipes down because she was farming. Here is one Mom had her scribble down.

  • 3 cups water
  • 1 teaspoon citric acid

How To Make emma lou's egg plant freeze

  • Step 1
    BOIL WATER AND CITRIC ACID IN A POT LARGE ENOUGH FOR A ROLLING BOIL AND ENOUGH ROOM FOR TWO SLICES OF PREPARED EGGPLANT SLICES TO FIT.
  • Step 2
    PLACE TWO PIECES OF SLICED EGGPLANT. BOIL 1 1/2 TO TWO MINUTES. REMOVE EGGPLANT FROM HEAT. PLACE IN COLANDER, RUN COLD WATER UNTIL PIECES ARE COOL.
  • Step 3
