My grandparents grew up in the 1920's during the depression.Grandma Emma was a farmer who was a Missouri Farm Wife of the year. She canned and froze everything we didn't use after our harvest. She didn't write a lot of her recipes down because she was farming. Here is one Mom had her scribble down.

Ingredients

Add to Grocery List

  • 3 c
    water
  • 1 tsp
    citric acid

How to Make Emma Lou's Egg Plant Freeze

Step-by-Step

  1. BOIL WATER AND CITRIC ACID IN A POT LARGE ENOUGH FOR A ROLLING BOIL AND ENOUGH ROOM FOR TWO SLICES OF PREPARED EGGPLANT SLICES TO FIT.
  2. PLACE TWO PIECES OF SLICED EGGPLANT. BOIL 1 1/2 TO TWO MINUTES. REMOVE EGGPLANT FROM HEAT. PLACE IN COLANDER, RUN COLD WATER UNTIL PIECES ARE COOL.
  3. PUT IN FREEZER, HAMBURGER STYLE. (I BELIEVE THAT MEANS TO PLACE IN A FREEZER CONTAINER, STACK EGGPLANT, FREEZER PAPER, EGGPLANT FREEZER PAPER, ETC.)
