ellen's purple green beans
When I received purple beans instead of green ones I didn't know what to do with them until a JAP member told me that they were just like green beans and would turn green during cooking. So here is the result.

Ingredients
- 1 or 2 pounds organic purple snap beans (or any type of green bean)
- 3 slices bacon, uncooked
- 1 small onion, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried parsley flakes
How To Make ellen's purple green beans

Step 1Wash beans thoroughly and drain. Place in a large saucepan with enough water to cover the beans. Bring to a boil. Reduce heat to medium-low.

Step 2Add bacon, onion, salt and pepper. Cover and simmer for 2 hours, making sure water covers beans and doesn't evaporate.
