How to Make Eggplant Fritters
- Peel eggplant and cut in cubes. Place in pot with water to cover and boil til tender. Drain.
- Sift flour, sugar, baking powder, and salt in bowl. Add egg and milk and blend together with dry ingredients. Mash eggplant and add to mixture. Mix well.
- Drop by tbsp into hot grease. Cook quickly on 1 side and flip. Cook til golden brown.
- Place on cookie sheet lined with paper towel. Sprinkle with powdered sugar or regular sugar. Enjoy!
