Ingredients
- 1 large eggplant
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup flour
- 1 - egg
- 1/2 cup milk
How To Make eggplant fritters

Step 1Peel eggplant and cut in cubes. Place in pot with water to cover and boil til tender. Drain.

Step 2Sift flour, sugar, baking powder, and salt in bowl. Add egg and milk and blend together with dry ingredients. Mash eggplant and add to mixture. Mix well.

Step 3Drop by tbsp into hot grease. Cook quickly on 1 side and flip. Cook til golden brown.

Step 4Place on cookie sheet lined with paper towel. Sprinkle with powdered sugar or regular sugar. Enjoy!
