eggplant fritters with red pepper mayonnaise

This recipe comes from my dear late mother-in-law. If you've never tasted eggplant and think it's yucky. Try this recipe

Ingredients

  • 2 medium eggplants
  • 1 large bell pepper (green, red, or yellow)
  • 1 large onion
  • 8 to 10 slices white bread
  • 1/2 cup flour
  • 2 teaspoons pepper
  • 1 teaspoon salt
  • 1 large egg
  • RED PEPPER MAYONNAISE
  • 1 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon minced garlic

How To Make eggplant fritters with red pepper mayonnaise

  • Step 1
    Peel eggplant and cube 1 inch size. Place in large pan filled with water and salt to taste(about 1/2 tsp). Boil till soft about 30 mins. Drain eggplant in colander.
  • Step 2
    While eggplant is boiling, cut bell pepper in small pieces. Chop onion. Place in small bowl.
  • Step 3
    In large bowl, put drained eggplant in bowl and mash with fork. Add bell pepper,and onions. Moisten white bread. Tear bread into pieces and put in mixture in the bowl. Add flour, salt, pepper and egg. Mix thoroughly.
  • Step 4
    In frying pan with any oil on medium heat, drop eggplant mixture by tablespoon fulls. Fry 5 mins. each side or till desired browness. Place on platter covered with paper towels. Enjoy!!!
