Ingredients

2 medium
eggplants
1/4 c
sugar
1
egg
1 c
flour (self-rising)
1 tsp
vanilla
cooking oil (for frying)

How to Make Eggplant Fritters

Step-by-Step

  • 1Peel and cube the eggplants. Boil in salty water until tender. Drain the cooked eggplants, let cool then mash.
  • 2Add the egg and sugar and mix well. Then add the flour and stir until combined. Add the vanilla and stir.
  • 3Form the eggplant mixture into small patties and drop in hot oil in a heavy skillet. Fry until brown.
  • 4Remove the cooked patties and allow to drain on paper towel.
