How to Make Eggplant Fritters
- 1Peel and cube the eggplants. Boil in salty water until tender. Drain the cooked eggplants, let cool then mash.
- 2Add the egg and sugar and mix well. Then add the flour and stir until combined. Add the vanilla and stir.
- 3Form the eggplant mixture into small patties and drop in hot oil in a heavy skillet. Fry until brown.
- 4Remove the cooked patties and allow to drain on paper towel.
