This is part of a series of 'eggplant' recipes taken from a vintage cookbook. Please use any light oil of your choice instead of the fats and butter listed. I usually use Canola oil.

    egg, beaten
  • 3 c
    cooked eggplant, mashed
  • 1/2 tsp
    salt
  • 1/8 tsp
    pepper
  • ·
    dash cayenne
  • ·
    fat

How to Make Eggplant Fritters

Step-by-Step

  1. Stir flour and egg into eggplant.
  2. Beat until very light. Season.
  3. Drop by tablespoons into hot deep fat (375 degrees F.) and fry until brown.
