My aunt made the best eggplant dressing. Unfortunately I did not copy her recipe. My husband gathered eggplant from the garden and I started searching online for a recipe that sounded like hers. I made it the other night and my family said the recipe was a keeper.

Ingredients
- 1 - 1 eggplant, chopped & cooked in salted water, save liquid if rice makes dressing too dry
- - cooked rice, dry
- 1 pound or more of ground beef
- 1/4 pound or more ground pork or pork sausage
- 1 cup celery
- 1 cup onion
- 1/2 cup green onion
- 1/2 cup bell pepper
- - garlic, salt, pepper & red pepper
How To Make eggplant dressing

Step 1Cook until done. Add eggplant and cook a few minutes more,

Step 2Add as much rice as you like,

Step 3May bake in oven a few minutes or cook on top of stove in heavy skillet.
