My grandma always fixed this for my dad and I. No one in my family is very crazy about eggplant but I love it.

Ingredients
- 2 cups peeled eggplant
- 2 tablespoons finely chopped onion
- 1/4 cup water
- 2 - eggs slightly beaten
- 2 slices white bread torn into pieces
- 1/2 cup milk
- 1 tablespoon salt/pepper
- 1 1/4 cups shredded cheddar
How To Make eggplant casserole

Step 1Cook eggplant and onion 7 mins, drain. Combine the rest of the ingredients reserving 1/4 cup of the cheese. Mix ingredients together, put into a greased baking dish Bake 350 for 25 mins. Sprinkle remaining cheese on top and bake an additional 5 mins.
