Ingredients
- 2 cups eggplant, cooked and mashed
- 1/4 cup onion, grated
- 1 cup pepper jack cheese
- 1 teaspoon louisisana hot sauce
- 2 cups cooked rice
- 2 large eggs, beaten
- 1/2 cup all purpose flour
- 1/2 teaspoon each of salt and pepper
- - vegetable oil for frying (i like safflower oil)
How To Make eggplant and rice fritters

Step 1Combine eggplant with all ingredients. Mix well. Drop rounded Tablespoons full into 1/2" of hot oil in heavy frying pan. Fry until brown, turn and brown other side. Remove from hot oil, drain on paper towels. Best when eaten warm.
