Ingredients

  • 2 cups eggplant, cooked and mashed
  • 1/4 cup onion, grated
  • 1 cup pepper jack cheese
  • 1 teaspoon louisisana hot sauce
  • 2 cups cooked rice
  • 2 large eggs, beaten
  • 1/2 cup all purpose flour
  • 1/2 teaspoon each of salt and pepper
  • - vegetable oil for frying (i like safflower oil)

How To Make eggplant and rice fritters

  • Step 1
    Combine eggplant with all ingredients. Mix well. Drop rounded Tablespoons full into 1/2" of hot oil in heavy frying pan. Fry until brown, turn and brown other side. Remove from hot oil, drain on paper towels. Best when eaten warm.
