This is always good for a simple meal with salad and garlic bread, I always have left over spaghetti sauce to use up, I have even been known to make egg plant parmesan sandwiches using the garlic bread. Hope you enjoy

Ingredients
- 1 medium egg plant (cut in thick slices)
- 3 large eggs (whipped)
- 2 cups italian bread crumbs
- 2 tablespoons oil (your favorite)
- I THINK I GOT IT SPAGHETTI SAUCE
- 2 cups spaghetti sauce
- 1 cup parmesan cheese
How To Make egg plant parmesan with spaghetti sauce (by linda)

Step 1Dip slices of egg plant in egg, then in Italian bread crumbs.

Step 2Heat oil in pan, brown on both sides, transfer to greased baking dish, pour warmed spaghetti sauce over egg plant ,sprinkle parmesan cheese on top.

Step 3Bake in 350 0ven for 40 minutes. Serve
