  • 1 - egg plant
  • 1/4 pound bulk pork sausage
  • 1 large onion, chopped
  • 1 cup fine dry bread crumbs
  • 1 - egg beaten
  • 1/3 TO 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

How To Make egg plant dressing

  • Step 1
    CUT THE TOP OFF THE EGG PLANT.PEEL IF DESIRED.CUT INTO 1/2 INCH CUBES.IN A MED. SAUCEPANCOOK EGGPLANT IN A SMALL AMOUNT OF BOILING SALTED WATER ABOUT 5 MIN.OR UNTIL TENDER. DRAIN.
  • Step 2
    IN A LARGE SKILLET COOK SAUSAGE AND ONION OVER MED.HIGH HEAT TIL SAUSAGE ARE BROWN. REMOVE FROM HEAT.
  • Step 3
    STIR IN EGGPLANT,BREAD CRUMBS,EGG ,MILK,SALT, AND PEPPER.TURN INTO A GREASED-1 QUART CASSEROLE DISH.BAKE IN A 350*OVEN ABOUT 30 MIN.OR UNTIL DRESSING IS HEATED THROUGH.
