Ingredients

  • 1 package bacon, diced
  • 1 - onion, diced
  • 1 - green bell pepper, diced
  • 2 - stalks celery, diced
  • 3 cups corn kernels
  • 1 - large tomato, diced
  • 3/4 cup milk or cream
  • 1/2 teaspoon cajun seasoning
  • - salt and pepper to taste

How To Make easy maque choux

  • Step 1
    Cook bacon until desired doneness. Remove bacon from pan and drain, reserving 2 tablespoons grease.
  • Step 2
    Add onion to pan and cook about 5 minutes. Add bell pepper and celery; cook about 5 minutes.
  • Step 3
    Stir in tomatoes, corn, and milk; reduce heat to medium-low and simmer 20 minutes.
  • Step 4
    Add cajun seasoning, salt, and pepper and simmer 10-15 minutes until sauce is reduced.
  • Step 5
    Stir in cooked bacon. Serve.
