easy cheesy squash casserole bake
This is one of those rare squash dishes that isn't mushy. The squash still has some toothsomeness to it. I had a bumper crop of squash and had to find ways to use it up that didn't involve squishy squash since the husband cannot stand overly soft textured food.

Ingredients
- 4 small yellow squash, sliced into discs
- 1/2 small onion, chopped
- 1 - sleeve vegetable flavored ritz crackers
- 2 cups cheddar cheese, shredded
- 3 - eggs, beaten
- 3/4 cup milk
- 1/4 cup butter, melted
- 2 teaspoons black pepper
- 1 teaspoon salt

Step 2Combine all ingredients well in a large bowl. Spoon evenly into a greased 9x13 casserole dish.
