easy cheesy squash casserole bake

This is one of those rare squash dishes that isn't mushy. The squash still has some toothsomeness to it. I had a bumper crop of squash and had to find ways to use it up that didn't involve squishy squash since the husband cannot stand overly soft textured food.

Ingredients

  • 4 small yellow squash, sliced into discs
  • 1/2 small onion, chopped
  • 1 - sleeve vegetable flavored ritz crackers
  • 2 cups cheddar cheese, shredded
  • 3 - eggs, beaten
  • 3/4 cup milk
  • 1/4 cup butter, melted
  • 2 teaspoons black pepper
  • 1 teaspoon salt

How To Make easy cheesy squash casserole bake

  • Step 1
    Preheat oven to 400
  • Step 2
    Combine all ingredients well in a large bowl. Spoon evenly into a greased 9x13 casserole dish.
  • Step 3
    Bake for 30 minutes or until top is browned.
