easy cheesy creamed spinach with garlic

My mother-in-law makes a wonderful creamed spinach. I tried my version, adjusted it to my taste, and added Parmesan cheese. I didn't measure anything when I made this, so feel free to adjust amounts if needed.

Lauren's cheesy creamed spinach with garlic is just as good as something you'd order at a fancy steakhouse. The sauce is thick, creamy, and full of garlic. Parmesan cheese adds a robust flavor to the cream sauce. This fresh creamed spinach is easy to make and, since it has a fancy feel, would make a wonderful holiday side dish.

Ingredients

  • 1 - 1 1/2 pounds fresh baby spinach
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 4 tablespoons minced garlic (or you can use 2-3 Tbsp garlic powder)
  • 1 1/2 cups milk, more or less to get the right consistency
  • 1/2 cup evaporated milk
  • 1/8 cup Parmesan cheese
  • salt, to taste
  • pepper, to taste

How To Make easy cheesy creamed spinach with garlic

  • Saute spinach until wilted.
    Step 1
    In a non-stick skillet, heat oil. On medium heat, add handfuls of spinach leaves. Add more as it cooks down until all spinach leaves are dark and wilted. Remove from heat and set aside.
  • Melt butter in a skillet.
    Step 2
    In a small saucepan or skillet, melt butter over medium heat.
  • Add flour.
    Step 3
    Add flour and incorporate it well to make a roux. Let it come to a bubble and cook for a few minutes.
  • Add garlic and whisk.
    Step 4
    Add garlic. Whisk until smooth.
  • Slowly add milk.
    Step 5
    Slowly add both types of milk whisking as you pour. If it is too thick, add extra milk.
  • Whisk in Parmesan cheese.
    Step 6
    Whisk in Parmesan cheese until smooth and heated through.
  • Stir in cooked spinach.
    Step 7
    Pour cream sauce over the spinach and mix well. Season with salt and pepper.
