easy, cheesy, broccoli casserole
My mom made this when I was growing up... I think she made it because it was the only way I would eat broccoli!! It is a great side because it includes both veggies and a starch! Bet your kids will eat broccoli if you serve them this!

Ingredients
- 1 1/2 cups uncooked long grain rice
- 10 ounces frozen broccoli
- 1 stick butter
- 3/4 cup finely chopped onion
- 1/2 cup finely chopped celery
- 2 cans cream of mushroom soup, fat-free
- 10 ounces cheese whiz
How To Make easy, cheesy, broccoli casserole

Step 1Preheat oven to 375 degrees

Step 2Take a 2 quart casserole dish and spray it with non stick spray.

Step 3Put the stick of butter and the cheese whiz in the casserole dish and microwave until melted

Step 4Stir the two together and then add all of the rest of the ingredients except the broccoli and stir.

Step 5Fold in the frozen broccoli. I keep it frozen and do not use fresh because fresh tends to over cook.

Step 6Bake covered for 1 1/2 hours then take the cover off and bake an additional 1/2 hour. Viola! It's done!
