Easy, Cheesy, Broccoli Casserole

My mom made this when I was growing up... I think she made it because it was the only way I would eat broccoli!! It is a great side because it includes both veggies and a starch! Bet your kids will eat broccoli if you serve them this!

Ingredients

  • 1 1/2 c
    uncooked long grain rice
  • 10 oz
    frozen broccoli
  • 1 stick
    butter
  • 3/4 c
    finely chopped onion
  • 1/2 c
    finely chopped celery
  • 2 can(s)
    cream of mushroom soup, fat-free
  • 10 oz
    cheese whiz

How to Make Easy, Cheesy, Broccoli Casserole

Step-by-Step

  1. Preheat oven to 375 degrees
  2. Take a 2 quart casserole dish and spray it with non stick spray.
  3. Put the stick of butter and the cheese whiz in the casserole dish and microwave until melted
  4. Stir the two together and then add all of the rest of the ingredients except the broccoli and stir.
  5. Fold in the frozen broccoli. I keep it frozen and do not use fresh because fresh tends to over cook.
  6. Bake covered for 1 1/2 hours then take the cover off and bake an additional 1/2 hour. Viola! It's done!
