easy, cheesy, broccoli casserole

My mom made this when I was growing up... I think she made it because it was the only way I would eat broccoli!! It is a great side because it includes both veggies and a starch! Bet your kids will eat broccoli if you serve them this!

Ingredients

  • 1 1/2 cups uncooked long grain rice
  • 10 ounces frozen broccoli
  • 1 stick butter
  • 3/4 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 2 cans cream of mushroom soup, fat-free
  • 10 ounces cheese whiz

How To Make easy, cheesy, broccoli casserole

  • Step 1
    Preheat oven to 375 degrees
  • Step 2
    Take a 2 quart casserole dish and spray it with non stick spray.
  • Step 3
    Put the stick of butter and the cheese whiz in the casserole dish and microwave until melted
  • Step 4
    Stir the two together and then add all of the rest of the ingredients except the broccoli and stir.
  • Step 5
    Fold in the frozen broccoli. I keep it frozen and do not use fresh because fresh tends to over cook.
  • Step 6
    Bake covered for 1 1/2 hours then take the cover off and bake an additional 1/2 hour. Viola! It's done!
