down east corn pudding
This corn pudding recipe is made in the Down East Carteret County (coastal), NC style. A little sweet with a hint of nutmeg. It is a perfect side dish with pork dishes. One of my favorites!

Ingredients
- 1 can cream style corn (14.75 oz)
- 2 large eggs, beaten
- 1/2 stick butter or margarine, melted
- 1 cup evaporated milk
- 1/2 cup sugar
- 2 tablespoons self-rising flour
- 1/8 teaspoon salt
- 1/8 teaspoon nutmeg
How To Make down east corn pudding

Step 1Mix cream-style corn and melted butter or margarine together in a bowl.

Step 2Add sugar, flour, eggs, salt, and nutmeg, stirring well.

Step 3Add milk gradually and stir well.

Step 4Pour into a 2 quart casserole dish (square or oval), sprayed with non-stick cooking spray.

Step 5Bake at 400 degrees F for approximately 40 minutes or until set.
