Ingredients

1/4 c
olive oil
3
minced garlic cloves
5
zucchini, cut into 1/4 inch slices
1/4 tsp
oregano
1/4 tsp
basil
5
tomatoes
1/2 c
seasoned bread crumbs
2 Tbsp
butter

How to Make Dixieland Casserole

Step-by-Step

  • 1Heat oil in skillet.
  • 2Add garlic and zucchini, and saute for a few minutes.
  • 3Remove from heat and set aside.
  • 4Peel tomatoes and cut into slices.
  • 5Place enough zucchini slices in bottom of an oiled 1 1/2 quart casserole to cover bottom.
  • 6Cover squash with tomato slices.
  • 7Continue to layer squash and tomatoes, ending with layer of sliced tomatoes.
  • 8Sprinkle top of last layer of tomatoes with basil, oregano, and seasoned bread crumbs mixed with butter.
  • 9Bake uncovered for 30 minutes in 350 oven.
