deliciously simple yellow summer squash
We have so much squash this summer and were growing weary of all the recipes out there to cook it. I came up with this simple way to serve it, and was so surprised at how delicious it is. A great side for any meal. It can also be a light lunch or snack.

Ingredients
- 1 medium yellow crooked neck squash
- 1 teaspoon olive oil, extra virgin
- 1 teaspoon Mrs. Dash table blend
- 2 teaspoons Caesar dressing
How To Make deliciously simple yellow summer squash

Step 1Wash and dry the whole squash. Cut off the ends (stem end and blossom end) and discard or compost them.

Step 2Cut the squash down the middle from the stem end to the blossom end. (lengthwise)

Step 3Place the cut squash on a microwave safe plate, cut side up. I rotate mine so they are in opposite directions to even out the vegetable proportions on the plate for even cooking.

Step 4Place the plated squash in the microwave. Close the door and microwave on high for 2 minutes.

Step 5Check the doneness by piercing both pieces on the cut side of the squash several times with a dinner fork.

Step 6Remove the plate of squash from the microwave. Pierce the squash a few more times. Spray or pour the oil on the cut side. Sprinkle the Mrs Dash on the pierced side of the squash.

Step 7Pour the salad dressing on the cut side of the squash. It doesn't take much. Then spread it end to end on the cut side with the fork. Serve hot.

Step 8Can be doubled, just add 2 minutes microwave time for each squash/serving. A medium squash is about 5-7 inches long.
