delectable bacon & mushroom green bean casserole

I made this for a Thanksgiving work potluck and it was the first pan to be cleared. This recipe is definitely for a group and even those who don't normally like green bean casserole LOVED it! Try it this holiday season if you get a chance.

Blue Ribbon Recipe

This is not your ordinary green bean casserole recipe. There's bacon inside and oh boy is it good. Using fresh ingredients elevates this dish. Having fresh mushrooms, bacon, and french fried onions mixed into the casserole and then adding Parmesan cheese at the end adds so much flavor. This side dish would impress anyone at a potluck or a holiday meal. After tasting this recipe, you may never make green bean casserole another way again!

Ingredients

  • 3 pounds fresh green beans, trimmed and chopped in half if they're real long
  • 8 ounces stemmed, sliced cremini mushrooms
  • 1 - large white onion, chopped
  • 1/2 stick butter or margarine
  • 1 package center cut bacon
  • 1 package French fried onions, 6 oz
  • 2 cans cream of mushroom soup, 10.5 oz each
  • 32 ounces chicken broth or stock
  • 1-2 teaspoon garlic powder and fresh chopped garlic (to your liking)
  • several - shakes of Parmesan cheese (the grated kind, not fresh)
  • - salt to taste and lots of pepper

How To Make delectable bacon & mushroom green bean casserole

  • Green beans, mushrooms, and onions prepped.
    Step 1
    I started by chopping and dicing everything that needed it to save time.
  • Boiling the green beans.
    Step 2
    Then boil the green beans covered on med/high heat in the chicken broth with salt and pepper until tender (about 10 minutes). Not too tender because you don't want soggy green beans (no one likes that).
  • Frying bacon.
    Step 3
    While they were boiling, I cooked all the bacon until pretty crispy and drained it on paper towels, chopped it and set it off to the side. When the green beans are done, drain them and leave them in the pot uncovered.
  • Sauteeing mushrooms and onions.
    Step 4
    Sautee the mushrooms and onion in the butter with a pinch of salt and pepper until the mushrooms have shrunk down and the onions are tender. While they're cooking, add the garlic.
  • Mushroom/onion mixture and the cream of mushroom soup added to green beans.
    Step 5
    Add the mushroom/onion mixture and the cream of mushroom soup to the green beans with another pinch of salt and pepper. Toss to coat.
  • Half the bacon and french fried onions added to the green beans.
    Step 6
    Dump the mixture into a casserole dish, add 1/2 the bacon, and 1/2 the French fried onions. Stir.
  • Parmesan cheese sprinkled on top.
    Step 7
    Then sprinkle Parmesan cheese on top and bake on 400 for about 15-20 minutes until it's bubbly.
  • Remaining French onions, bacon, and Parmesan cheese sprinkled on top.
    Step 8
    Top with the remaining French onions, bacon, and another generous sprinkle of Parmesan cheese. Return to the oven for another 15 minutes or until the French onions start to get a nice brown color.
  • Delectable Bacon & Mushroom Green Bean Casserole on a plate.
