My daughter surprised me with this simple, yet tasty squash. I was out weeding and when I came in, she served me the plate in the photo. Was almost too easy of a recipe to post, but seeing she took the initiative to cook something on her own, I decided to post it. It really was yummy! I was looking for more...LOL! I might make a cook out of her after all. :) Enjoy!

Ingredients For ~ daughters simple summer squash ~

  • 1 md
    yellow squash - quartered and sliced about 3/4 inch thick
  • 1 sm
    zucchini - cut in half and sliced
  • 2 Tbsp
    olive oil - divided
  • 1 tsp
    butter
  • 2 clove
    garlic, finely minced
  • 1/4 tsp
    red pepper flakes
  • 1/2 tsp
    dried onion - or could use fresh
  • pink
    salt & fresh cracked pepper to taste

How To Make ~ daughters simple summer squash ~

    She added the squash to a bowl, sprinkled with about 1 tablespoon olive oil, added salt and pepper.

    In a medium skillet over med heat, she added 1 tablespoon olive oil and the butter. Add the squash, garlic and onion, Stir, cover and cook for 10 - 12 minutes. It steamed nicely, wasn't mushy...she ended up with the perfect texture. Just right! Serve hot! This made somewhat of a sauce, which if vegetarian would be great served over some pasta.
