~ Daughters Simple Summer Squash ~
1 mediumyellow squash - quartered and sliced about 3/4 inch thick
1 smallzucchini - cut in half and sliced
2 Tbspolive oil - divided
2 clovegarlic, finely minced
1/4 tspred pepper flakes
1/2 tspdried onion - or could use fresh
pinksalt & fresh cracked pepper to taste
How to Make ~ Daughters Simple Summer Squash ~
- In a medium skillet over med heat, she added 1 tablespoon olive oil and the butter. Add the squash, garlic and onion, Stir, cover and cook for 10 - 12 minutes. It steamed nicely, wasn't mushy...she ended up with the perfect texture. Just right!
Serve hot! This made somewhat of a sauce, which if vegetarian would be great served over some pasta.
