~ daughters simple summer squash ~
My daughter surprised me with this simple, yet tasty squash. I was out weeding and when I came in, she served me the plate in the photo. Was almost too easy of a recipe to post, but seeing she took the initiative to cook something on her own, I decided to post it. It really was yummy! I was looking for more...LOL! I might make a cook out of her after all. :) Enjoy!

Ingredients
- 1 medium yellow squash - quartered and sliced about 3/4 inch thick
- 1 small zucchini - cut in half and sliced
- 2 tablespoons olive oil - divided
- 1 teaspoon butter
- 2 cloves garlic, finely minced
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon dried onion - or could use fresh
- pink - salt & fresh cracked pepper to taste

Step 1She added the squash to a bowl, sprinkled with about 1 tablespoon olive oil, added salt and pepper.

Step 2In a medium skillet over med heat, she added 1 tablespoon olive oil and the butter. Add the squash, garlic and onion, Stir, cover and cook for 10 - 12 minutes. It steamed nicely, wasn't mushy...she ended up with the perfect texture. Just right! Serve hot! This made somewhat of a sauce, which if vegetarian would be great served over some pasta.
