I had a hard time getting my son Daniel to eat vegetables when he was little but he loved cheese so I developed this recipe to get him to try them. He loved them and they are a frequent item on my table ever since. He especially loves them served with spaghetti and garlic toast. My husband loves them too.

Ingredients

  • 2 medium
    zucchini
  • 2 medium
    yellow squash
  • 1 medium
    red bell pepper
  • 1/4 c
    italian seasoned dry bread crumbs
  • 1/4 c
    grated parmesan cheese
  • 1-2 Tbsp
    extra virgin olive oil

How to Make Daniel Vegetables

Step-by-Step

  1. Chop vegetables into uniform 1/2 to 1 inch chunks. (removing stems, veins and seeds from bell pepper)
  2. Place all vegetables in a medium size bowl and drizzle with enough olive oil to coat all when stirred.
  3. In another small bowl mix the bread crumbs and grated parmesan cheese together.
  4. Pour the crumb/cheese mixture over the vegetables and stir until vegetables are coated well with mixture.
  5. Spread coated vegetables in a single layer onto a large cookie or jelly roll pan.
  6. Cook under the broiler (turning once) until they are browned well. (nice and dark golden)
