I had a hard time getting my son Daniel to eat vegetables when he was little but he loved cheese so I developed this recipe to get him to try them. He loved them and they are a frequent item on my table ever since. He especially loves them served with spaghetti and garlic toast. My husband loves them too.

Ingredients

  • 2 medium zucchini
  • 2 medium yellow squash
  • 1 medium red bell pepper
  • 1/4 cup italian seasoned dry bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1-2 tablespoon extra virgin olive oil

How To Make daniel vegetables

  • chopped vegetables
    Step 1
    Chop vegetables into uniform 1/2 to 1 inch chunks. (removing stems, veins and seeds from bell pepper)
  • vegetables drizzled with olive oil
    Step 2
    Place all vegetables in a medium size bowl and drizzle with enough olive oil to coat all when stirred.
  • parmesan and bread crumbs to mix
    Step 3
    In another small bowl mix the bread crumbs and grated parmesan cheese together.
  • vegetables coated with cheese/crumb mixture
    Step 4
    Pour the crumb/cheese mixture over the vegetables and stir until vegetables are coated well with mixture.
  • vegetables to go under broiler
    Step 5
    Spread coated vegetables in a single layer onto a large cookie or jelly roll pan.
  • ready to serve
    Step 6
    Cook under the broiler (turning once) until they are browned well. (nice and dark golden)
