You can use either yellow squash or zucchini. Perhaps even a winter squash like butternut. I haven't tried that but it would probably be good. Make sure you stir the coconut milk as it separates in the can.

Ingredients
- 3 - yellow squash
- 1/2 - onion sliced
- 2 cloves fresh garlic or 1/2 t garlic powder
- 1/2 can stirred coconut milk
- 1 heaping teaspoon red curry paste
- 1/2 teaspoon curry powder
- 1 tablespoon sugar
- - salt and pepper to taste
How To Make curried squash

Step 1Prepare squash and slice into rounds. Do the same with the onion. Saute both in a skillet with a little oil until begins to brown just a little. Then add the curry powder and curry paste, salt and pepper and let the curry paste dissolve into the squash juices.

Step 2Add in the coconut milk and sugar cover and let cook on low till squash and onion are tender.

Step 3Serve as a side with and Asian main dish.
