You can use either yellow squash or zucchini. Perhaps even a winter squash like butternut. I haven't tried that but it would probably be good.
Make sure you stir the coconut milk as it separates in the can.

yellow squash
onion sliced
2 clove
fresh garlic or 1/2 t garlic powder
1/2 can(s)
stirred coconut milk
1 heaping tsp
red curry paste
1/2 tsp
curry powder
1 Tbsp
salt and pepper to taste

How to Make Curried Squash


  • 1Prepare squash and slice into rounds. Do the same with the onion. Saute both in a skillet with a little oil until begins to brown just a little. Then add the curry powder and curry paste, salt and pepper and let the curry paste dissolve into the squash juices.
  • 2Add in the coconut milk and sugar cover and let cook on low till squash and onion are tender.
  • 3Serve as a side with and Asian main dish.
