Ingredients

  • ROMANESCO
  • 1 large head romanesco, trimmed and sliced into 4 steaks
  • 2 tablespoons olive oil
  • 2 teaspoons curry powder
  • salt
  • CILANTRO LIME COMPOUND BUTTER
  • 8 ounces butter, room temperature
  • 1/2 cup cilantro, chopped
  • 2 tablespoons grated lime zest
  • 2 tablespoons lime juice
  • salt

How To Make curried romanesco steak w cilantro lime butter

  • Step 1
    Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Place the romanesco steaks on the baking sheet.
  • Step 2
    Drizzle with the olive oil and season with the curry powder and salt. Roast in the oven for about 25 minutes, until the steaks can be pierced easily with a fork.
  • Step 3
    Meanwhile, place all the ingredients for the compound butter in a food processor. Process until smooth. Roll the butter into a log with wax paper and place in the freezer to harden up.
  • Step 4
    Serve the romanesco steaks with the compound butter.
