- ROMANESCO
- 1 large head romanesco, trimmed and sliced into 4 steaks
- 2 tablespoons olive oil
- 2 teaspoons curry powder
- salt
- CILANTRO LIME COMPOUND BUTTER
- 8 ounces butter, room temperature
- 1/2 cup cilantro, chopped
- 2 tablespoons grated lime zest
- 2 tablespoons lime juice
- salt
How To Make curried romanesco steak w cilantro lime butter

Step 1Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Place the romanesco steaks on the baking sheet.

Step 2Drizzle with the olive oil and season with the curry powder and salt. Roast in the oven for about 25 minutes, until the steaks can be pierced easily with a fork.

Step 3Meanwhile, place all the ingredients for the compound butter in a food processor. Process until smooth. Roll the butter into a log with wax paper and place in the freezer to harden up.
