Ingredients
- 3 - medium acorn squash {about 1 pound each}
- 1 lb - lean ground beed
- 1/2 cup chopped onions
- 3 - cloves minced garlic
- 1/2 cup water
- 1/2 cup cooked rice
- 2 tablespoons orange juice
- 2 tablespoons brown sugar1
- 1 teaspoon curry powder
- 2 tablespoons chopped fresh parsley
- - salt and pepper to taste
- 2 tablespoons beef granules
How To Make curried beef-stuffed acorn sqyash

Step 1Cut squash in half remove seeds..invert squash on a greased baking pan bake uncovered at 350F for 35 to 40 minutes or until almost tender.

Step 2In fry pan add meat and cook til no longer pink,,breaking it into pieces add onions, garlic and mushrooms and cook til tender....mix in the beef granules which have been mixed together with 1 tablespoon cornstarch and the water..cook 5 minutes more add rice and mix til combined.

Step 3Fill each shell with filling place in baking pan and add hot water to depth of 1/4 inch..cover with foil and bake at 350F for 20 to 30 minutes or til tender
