cucumbers cooked with parsley sauce
This is an old recipe from one of Julia Child when she had her TV cooking show..I remember I wrote it on an envelope-couldn't find any paper.Found it again while sorting out some of my cook books for garage sale.

Ingredients
- 3 medium slender cucumbers,peeled, sliced 1 inch thick (4 cups)
- 1 tablespoon butter
- 2 tablespoons finely chopped onion
- 2 tablespoons all purpose flour
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
- 1 1/2 cups whole milk
- 1 large egg, beaten
- 2 tablespoons finely chopped fresh parsley
How To Make cucumbers cooked with parsley sauce

Step 1Cook cucumbers, covered, in 1 inch boiling water, 10 minutes; drain well.

Step 2In a medium skillet melt the butter, sauté the onion until golden, about 5 minutes. Remove from heat. Add flour, salt, and pepper, stirring until smooth.

Step 3Gradually stir in milk; bring to boiling, stirring until thickened. Stir a small amount of the hot sauce into egg; then pour back into skillet. Add cucumbers.

Step 4Over low heat, bring cucumber mixture just to boiling, stirring. Sprinkle with parsley. Enjoy.
