crusty white corn casserole

The bacon and the jalapeno give this corn a nice taste.

Ingredients

  • 1 can creamed white corn (16 oz)
  • 1 can whole white corn
  • 2 - beaten eggs
  • 8 ounces sour cream
  • 1 stick butter
  • 4 slices bacon
  • 1 small jalapeno pepper or use a mild pepper, finely chopped
  • 1/4 cup onion, finely chopped

How To Make crusty white corn casserole

  • Step 1
    Preheat over to 350ºF. Melt butter n a 8X12 inch glass baking dish in the oven. Remove when butter melts. Fry bacon until crisp. Remove bacon to paper towels. Once cooled; crumble bacon.
  • Step 2
    Mix the bacon & sautéd onions, both cans of corn, eggs, sour cream and chopped pepper and pour into the hot buttered pan.
  • Step 3
    Bake one hour until a crust forms. Take out of oven; cover with the crumbled bacon. Serve as a side with some Spicy chicken.
