Sometimes I just like to eat quiche without the bread. This recipe is so simple, but so good.

Ingredients

  • 1 tablespoon olive oil, extra virgin
  • 1/2 - medium onion,chopped
  • 2 boxes frozen spinach,thawed and drained well
  • 6 - large eggs,beaten
  • 3 cups cheddar cheese, shredded
  • 1/4 teaspoon salt and pepper
  • 3/4 cup heavy cream

How To Make crustless spinach quiche

  • Step 1
    Preheat oven to 350 degrees.Spray 9 in. pie pan with non-stick spray.
  • Step 2
    Heat oil in skillet over med.high heat.Add onion and cook until soft.Stir in spinach and continue cooking until there is no liquid left.
  • Step 3
    In a bowl,combine eggs,cream,cheese,salt,and pepper.Add spinach to this mixture and stir to blend together.
  • Step 4
    Spoon into pie pan.And bake 30 mins.or until set and slightly browned. Let cool slightly before slicing.
