I have had this recipe for years and we really enjoy it when the caulifower is nice and fresh.

Ingredients

  • 1 medium head of cauliflower
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup dried bread crumbs (panko if you have it)
  • 1/4 cup parmesan cheese
  • 1 teaspoon herb of your choice--basil, parsley, italian seasonings, etc.
  • 1/4 cup flour
  • 2 tablespoons butter, melted

How To Make crusted herbed caulifower

  • Step 1
    Separate cauliflower into pieces.
  • Step 2
    Beat eggs, salt, pepper. Toss together bread crumbs, parmesan cheese, and herbs.
  • Step 3
    Place flour in a plastic bag, add cauliflower pieces a few at a time and shake to coat with flour.
  • Step 4
    Dip cauliflower in egg, then in crumbs, coating well.
  • Step 5
    Place on a baking sheet covered with foil or parchment paper. Drizzle with the melted butter.
  • Step 6
    Bake in a 400 degree oven for 20 minutes or until golden and fork tender.
