crispy baked asparagus fries
I am always looking for new ways to use fresh summertime vegetables. We love asparagus and french fries, so I decided to "combine" the two methods. We love this and even the kids eat it!

Ingredients
- 1 pound asparagus, trimmed
- 1/2 cup flour
- 2 - eggs, lightly beaten
- 3/4 cup panko bread crumbs
- dash salt and pepper
- 1/4 cup parmesan cheese
How To Make crispy baked asparagus fries

Step 1Dredge asparagus in flour

Step 2Mix the Panko, parmesan, salt and pepper together.

Step 3Dip asparagus in egg and then into the mixture of panko and parmesan, salt and pepper.

Step 4Place in a single layer on a wire rack on a baking sheet. Bake in preheated oven (425 degrees) until asparagus are golden brown, approximately 7-13 minutes.
