Ingredients

  • 1/4 cup olive oil, extra virgin
  • salt and pepper
  • 2 pounds small yukon gold potatoes, halved
  • 6 medium garlic cloves, thinly sliced
  • 2 tablespoons finely chopped parsley

How To Make crisp garlic yukon gold potatoes

  • Step 1
    Brush a baking sheet with 1 tbsp. of the oil and sprinkle with salt and pepper. Arrange the gold potatoes on the baking sheet, cut side down, and bake at 400 degrees for 45 minutes. Transfer potatoes to a bowl.
  • Step 2
    Heat the remaining 3 tbsp. of oil in a large skillet. Add the garlic and cook over moderately low heat, stirring, until crisp; do not let garlic get too brown.
  • Step 3
    Pour the garlic and oil over the potatoes, add the parsley and toss. Season with salt and pepper and serve at once.
