Ingredients

  • 1 can 14.5 oz. can diced tomatoes
  • 1 package 16-oz. package frozen okra, sliced
  • 3 - slices bacon
  • 1 cup frozen onion seasoning blend
  • 1 cup corn kernels, frozen
  • 1/2 cup water
  • 1 teaspoon creole seasoning
  • 1/4 teaspoon pepper
  • - hot cooked rice, optional

How To Make creole-style okra

  • Step 1
    Cook bacon in a large pot or dutch oven until crisp; remove and drain on paper towels -- reserve drippings. Crumble bacon and set aside.
  • Step 2
    Cook okra, tomatoes, onion/seasonings, corn, water, creole seasoning and pepper in hot bacon drippings over medium-high heat, stirring occasionally, for about 5 minutes.
  • Step 3
    Reduce the heat to low and cover. Simmer 15 minutes or until vegetables are tender. Top with crumbled bacon. Serve over hot-cooked rice, if desired.
