    14.5 oz. can diced tomatoes
  • 1 pkg
    16-oz. package frozen okra, sliced
  • 3
    slices bacon
  • 1 c
    frozen onion seasoning blend
  • 1 c
    corn kernels, frozen
  • 1/2 c
  • 1 tsp
    creole seasoning
  • 1/4 tsp
  • ·
    hot cooked rice, optional

How to Make Creole-Style Okra


  1. Cook bacon in a large pot or dutch oven until crisp; remove and drain on paper towels -- reserve drippings. Crumble bacon and set aside.
  2. Cook okra, tomatoes, onion/seasonings, corn, water, creole seasoning and pepper in hot bacon drippings over medium-high heat, stirring occasionally, for about 5 minutes.
  3. Reduce the heat to low and cover. Simmer 15 minutes or until vegetables are tender. Top with crumbled bacon. Serve over hot-cooked rice, if desired.
