Ingredients

  • 5 tablespoons butter, divided
  • 1 1/2 cups crushed corn flakes, divided
  • 1/4 cup chopped onion
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon each salt and pepper
  • 1 1/4 cups milk
  • 1 cup shredded swiss cheese
  • 1 package (10 ounces) frozen spinach, thawed and squeezed dry
  • 2 - well beaten eggs

How To Make creamy swiss spinach

  • Step 1
    Preheat oven to 350 degrees. In a large saucepan melt butter over low heat. Remove 2 tablespoons to a large bowl and add 3/4 cup crushed corn flakes.Stir together and set aside for topping.
  • Step 2
    Stir the onion, flour, salt, and pepper into the butter remaining in the saucepan. Cook for about 1 minute, stirring constantly. Gradually add milk, stirring constantly, until mixture is smooth. Increase heat and bring to a boil, still stirring. Remove from heat. Add cheese and stir until melted. Next add spinach and mix well. Add eggs and remaining cereal. Mix. Pour into a 1 quart casserole dish. Sprinkle reserved topping (crushed corn flakes and butter) over all and bake for 25 minutes or until heated through.
