I found this delicious recipe on the net when looking for ways to use a bumper crop of Brussels sprouts 2 years ago.

Ingredients

  • 1/2 lb
    fresh brussels sprouts, quartered
  • 1 medium
    onion,finely chopped
  • 1 Tbsp
    butter or margerine
  • 4 oz
    sour cream
  • 4 oz
    cottage cheese
  • 1 clove
    garlic, minced
  • 1/2 tsp
    paprika
  • 1/4 tsp
    salt
  • 1/8 tsp
    caraway seeds, optional
  • 1 1/2 c
    noodles, uncooked
  • 1/2 c
    soft bread crumbs
  • 1 Tbsp
    melted butter or margerine

How to Make Creamy Sprouts and Noodles

Step-by-Step

  1. Cook and drain noodles. Cook sprouts until tender
  2. Saute onion in butter until golden brown. Remove from heat and stir in sour cream, cottage cheese, garlic, paprika, salt and caraway seeds. Add sprouts and noodles.
  3. Spoon into sprayed 1 qt. baking dish. Toss bread crumbs and melted butter and sprinkle over. Bake, uncovered, at 375 for 20 minutes until golden brown on top.
