I wanted a corn side dish with grilled chicken and all I had on hand was a can of Mexicorn. So I added a little more flavor for this quick and simple dish.

Ingredients
- 11 ounces mexicorn, drain about 1/2 of the liquid
- 2 ounces cream cheese
- 2 tablespoons unsalted butter
- salt and pepper, to taste
- 1 tablespoon minced jalapeno, optional
How To Make creamy mexicorn

Step 1Add all ingredients in a small saucepan and heat on low heat until the cream cheese is melted and the corn is thick and creamy.

Step 2Serve.

Step 3Variation: Place all ingredients into a crock pot on low, Cook for about 3 hours until thick and creamy. Salt and pepper to taste.
