A light summer side that is fresh and creamy!

Ingredients

  • 2-3 medium cucumbers, sliced thing (peeled or not as you prefer)
  • 1 cup sour cream
  • 2-3 tablespoons white vinegar or white wine vinegar
  • 1 cup julieanned snow peas (or other sweet edible pea pod)
  • 1/2 cup fresh dill, chopped (may use dill weed 1-2 tbsp if not fresh is handy)
  • 1 medium sweet onion, sliced thin
  • 1/2 cup fresh garden peas (may use frozen early june peas, but not as good!)
  • 1/4 cup milk
  • 1-2 tablespoon sugar

How To Make creamy cucumbers with snow peas

  • Step 1
    Creamy Cucumbers and Snow Peas 2-3 Medium cucumbers, sliced thin 1 C. Sour Cream 2-3 Tbsp White Vinegar or White Wine Vinegar (as you prefer) Salt and Pepper to Taste 1-2 C. julianned snow pea or other edible pea pods 5 Tbsp dried dill OR fresh chopped dill (to taste) 1 medium sweet onion sliced thin 1/2 C fresh garden peas 1/4 C skim milk 1-2 Tbsp Sugar Combine all ingredients except pea-pods and cucumbers. Mix until smooth and creamy. Taste test as you add vinegar, dill and sugar to find your "sweet spot" more sugar will give it a sweeter taste, less sugar will be zingier. If you over-do the vinegar, cut it with sugar.
  • Step 2
    Fold in cucumbers and pea pods, chill until cool throughout.
