Ingredients

  • 1/2 c
    green onion slices
  • 1/2 c
    chopped red pepper
  • 1/2 c
    butter, divided
  • 2 - 10 oz
    packages of sweet corn, thawed, drained
  • 1/2 lb
    velveeta cheese, cubed
  • 2/3 c
    crushed tortilla chips
  • 1/2 tsp
    mexican seasoning
  • 2 Tbsp
    chopped cilantro, i use parsley

How to Make Creamy Corn Au Gratin

Step-by-Step

  1. Cook and stir onions and pepper in 2 tablespoons of butter; reduce heat to low.

    Stir in corn and processed cheese cubes.. Cook 5 to 7 minutes or until cheese is melted and mixture is thoroughly heated, stirring occasionally.
  2. Melt remaining butter in separate pan; stir in tortilla chips and seasoning. Cook over medium heat 3 minutes; stir in cilantro.
  3. Spoon corn mixture into serving bowl, sprinkle with tortilla mixture. Sprinkle with additional cilantro and red pepper.
