Ingredients
- 1/2 cup green onion slices
- 1/2 cup chopped red pepper
- 1/2 cup butter, divided
- 2 - 10 ounces packages of sweet corn, thawed, drained
- 1/2 pound velveeta cheese, cubed
- 2/3 cup crushed tortilla chips
- 1/2 teaspoon mexican seasoning
- 2 tablespoons chopped cilantro, i use parsley
How To Make creamy corn au gratin

Step 1Cook and stir onions and pepper in 2 tablespoons of butter; reduce heat to low. Stir in corn and processed cheese cubes.. Cook 5 to 7 minutes or until cheese is melted and mixture is thoroughly heated, stirring occasionally.

Step 2Melt remaining butter in separate pan; stir in tortilla chips and seasoning. Cook over medium heat 3 minutes; stir in cilantro.

Step 3Spoon corn mixture into serving bowl, sprinkle with tortilla mixture. Sprinkle with additional cilantro and red pepper.
