Creamy Corn Au Gratin
1/2 cgreen onion slices
1/2 cchopped red pepper
1/2 cbutter, divided
2 - 10 ozpackages of sweet corn, thawed, drained
1/2 lbvelveeta cheese, cubed
2/3 ccrushed tortilla chips
1/2 tspmexican seasoning
2 Tbspchopped cilantro, i use parsley
How to Make Creamy Corn Au Gratin
- Cook and stir onions and pepper in 2 tablespoons of butter; reduce heat to low.
Stir in corn and processed cheese cubes.. Cook 5 to 7 minutes or until cheese is melted and mixture is thoroughly heated, stirring occasionally.
- Melt remaining butter in separate pan; stir in tortilla chips and seasoning. Cook over medium heat 3 minutes; stir in cilantro.
- Spoon corn mixture into serving bowl, sprinkle with tortilla mixture. Sprinkle with additional cilantro and red pepper.
