Ingredients
- 12 cups water
- salt
- 2 pounds fresh spinach
- 2 tablespoons butter
- 2 small shallots, minced
- 3 cups minced garlic
- 1/4 cup heavy cream
- 1/4 cup mascarpone cheese
- 1 cup grated Parmigiano-reggiano
How To Make creamy cheesy spinach

Step 1Add water and salt to a large pot. Bring to a boil. Add the spinach and blanch for 2 minutes. Drain well, squeezing out as much moisture as possible. Set aside.

Step 2Add the butter to the pan and, once melted, cook the shallots and garlic about 4 minutes. Season with salt.

Step 3Stir in the heavy cream, mascarpone, and Parmigiano cheese. Cook 1 minute and add the spinach. Cook 2 minutes until cheese is melted. Taste and season with salt and pepper.
