This is a good side dish to go with just about anything. My family likes it because it is just a little different from the ordinary. The jalapeno pepper and cumin give it a little bit of kick.

Ingredients

  • 2 pounds frozen whole kernel corn
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 large bell pepper finely chopped
  • 1 - jalapeno peppers seeded finely chopped
  • 1/2 teaspoon cumin ground
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 cup graded sharp cheddar cheese
  • 3 ounces cream cheese

How To Make creamy, cheesy corn and peppers

  • Step 1
    In a large pot combine all ingredients except the cheeses.
  • Step 2
    Bring to a boil over medium heat.
  • Step 3
    reduce heat and simmer for about 30 minutes stirring often to prevent scalding.
  • Step 4
    Add cheeses and stir until they are melted. remove from heat.
