This is a good side dish to go with just about anything. My family likes it because it is just a little different from the ordinary. The jalapeno pepper and cumin give it a little bit of kick.

frozen whole kernel corn
1/2 c
2 Tbsp
1 large
bell pepper finely chopped
jalapeno peppers seeded finely chopped
1/2 tsp
cumin ground
1/4 tsp
ground black pepper
1 tsp
1 c
graded sharp cheddar cheese
3 oz
cream cheese

How to Make Creamy, Cheesy Corn and Peppers


  • 1In a large pot combine all ingredients except the cheeses.
  • 2Bring to a boil over medium heat.
  • 3reduce heat and simmer for about 30 minutes stirring often to prevent scalding.
  • 4Add cheeses and stir until they are melted. remove from heat.
