Ingredients

  • 3 bags - cauliflower, small florets, frozen, thawed
  • 4 cloves garlic, peeled & crushed
  • 1/2 cup buttermilk
  • 4 teaspoons olive oil, extra virgin
  • 1 teaspoon butter
  • 1/2 teaspoon salt & pepper
  • 8 ounces cream cheese, room temperature
  • - chives, fresh

How To Make creamy cauliflower puree

  • Step 1
    Place cauliflower florets & garlic in a steamer basket over boiling water, cover & steam until very tender, 12 - 15 minutes.
  • Step 2
    Place the cooked cauliflower & garlic in a food processor. Add buttermilk, 2 tsp oil, butter, cream cheese, salt & pepper; pulse several times, then process until smooth & creamy. Transfer to serving bowl. Drizzle with the remaining 2 tsp oil & garnish with chives. Enjoy!
