Ingredients

  • 2 medium cauliflower heads, broken into small florets
  • 3 cloves garlic, minced
  • 2 tablespoons butter, plus more for serving
  • 1/4 cup Parmesan cheese
  • 1/4 cup sour cream
  • salt and pepper
  • 3 tablespoons reserved water from cooking the cauliflower

How To Make creamy cauliflower mash

  • Step 1
    Cook the cauliflower in heavily salted boiling water for about 20 minutes. Depending on the size of the florets. Drain, reserving 1 cup of the water.
  • Step 2
    Add the cauliflower, 3 Tbsp water, garlic, butter, Parmesan, and sour cream.
  • Step 3
    Blitz until it's smooth. If it's too thick, add more water. Taste and season with salt and pepper. Serve with more butter.
