Ingredients
- 2 medium cauliflower heads, broken into small florets
- 3 cloves garlic, minced
- 2 tablespoons butter, plus more for serving
- 1/4 cup Parmesan cheese
- 1/4 cup sour cream
- salt and pepper
- 3 tablespoons reserved water from cooking the cauliflower
How To Make creamy cauliflower mash

Step 1Cook the cauliflower in heavily salted boiling water for about 20 minutes. Depending on the size of the florets. Drain, reserving 1 cup of the water.

Step 2Add the cauliflower, 3 Tbsp water, garlic, butter, Parmesan, and sour cream.

Step 3Blitz until it's smooth. If it's too thick, add more water. Taste and season with salt and pepper. Serve with more butter.
