creamed onions
This is a delicious side addition to Thanksgiving or Christmas dinner. It's wonderful anytime if you love onions. My Mother made these for many years as did I and it's one of my Sons favorites. Hope you enjoy as much as we do.

Ingredients
- 2 pounds onions, small white or 2-16 oz jars of onions heated and drained
- 2 tablespoons butter or margerine
- 2 tablespoons all purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper, white or black
- 1 1/2 cups milk, evaporated milk or half and half
- 1 dash nutmeg or to taste
- 1 pinch sugar (optional)
How To Make creamed onions

Step 1For the fresh onions, add to several inches of salted boiling water. Cover and cook until tender, about 15-20 minutes for small and 30-35 for the larger. Drain and remove skins.

Step 2Melt butter over low heat. Blend in flour, salt and pepper. Cook over low heat stirring constantly until smooth and bubbly..

Step 3Romove from heat. Slowly stir in milk of choice. Place back on heat and bring to boiling stirring constantly. Simmer and stir 1 minute.

Step 4Add nutmeg and sugar if desired. Correct seasoning and pour over onions.
