This is a delicious side addition to Thanksgiving or Christmas dinner. It's wonderful anytime if you love onions. My Mother made these for many years as did I and it's one of my Sons favorites. Hope you enjoy as much as we do.

Ingredients

  • 2 pounds onions, small white or 2-16 oz jars of onions heated and drained
  • 2 tablespoons butter or margerine
  • 2 tablespoons all purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper, white or black
  • 1 1/2 cups milk, evaporated milk or half and half
  • 1 dash nutmeg or to taste
  • 1 pinch sugar (optional)

How To Make creamed onions

  • Step 1
    For the fresh onions, add to several inches of salted boiling water. Cover and cook until tender, about 15-20 minutes for small and 30-35 for the larger. Drain and remove skins.
  • Step 2
    Melt butter over low heat. Blend in flour, salt and pepper. Cook over low heat stirring constantly until smooth and bubbly..
  • Step 3
    Romove from heat. Slowly stir in milk of choice. Place back on heat and bring to boiling stirring constantly. Simmer and stir 1 minute.
  • Step 4
    Add nutmeg and sugar if desired. Correct seasoning and pour over onions.
