creamed onions
I have a book with taped recipe clippings I did as a hobby back in 1978 and this is one I found to be great with fried fish or even a meatloaf.I have even added fried liver to this dish to make it into a main dish. Hope you try and enjoy.

Ingredients
- 2 pounds onions, sliced
- 1/4 cup butter
- 1/4 cup flour
- 2 cups heavy cream
- pinch - each of nutmeg, salt, black pepper
- 2 dashes hot pepper sauce *opt*
How To Make creamed onions

Step 1place onions in deep skillet, cover with water and simmer until tender. pour off any water and set onions aside for now

Step 2In same skillet melt butter until bubbly slowly stir in flour under high heat

Step 3turn heat down to medium and slowly add cream,( I scald cream in a seperate pot before adding) stirring constantly

Step 4cream should thicken nicely, add spices

Step 5return onions to skillet and heat thru serve with your main dish

Step 6I have used a mixture of type of onions, such as some green tops snipped in as well. I have on occassion added 1 teaspoon of sugar if the onions in season are not sweet enough.
