Creamed (Cheese) Spinach
2 pkg(10 oz.) frozen chopped spinach
1/2 cchopped green onion
4 clovegarlic, minced
4 ozcream cheese
1/4 cgrated parmesan (optional)
How to Make Creamed (Cheese) Spinach
- Thaw spinach and squeeze all the water out. (I put it in a colander and use a potato masher to squeeze all the water out.) Set aside.
- In a large sauce pan, heat butter over medium heat. Add green onion and garlic, season with salt and pepper. Cook just until flavors are brought out.
- Add cream cheese and milk, cook, stirring constantly until cream cheese is melted.
- Stir in spinach and simmer until mixture is warmed through. Season with salt & pepper to taste. Garnish with a little grated parmesan cheese if desired.
