This recipe is simple but one of my absolute favorites. It has lots of holiday memories. My mom always made it for our holiday meals and now I do. It is also the dish that I always get asked to bring to my husband's work get togethers. Just a little ideal to make it more festive. During Christmas my mom adds a jar of pimentoes to give it more color. The green from the chiles and the red from the pimentoes.

Ingredients

  • 2 cans whole kernel sweet corn
  • 1 can chopped chiles, chopped
  • 8 ounces cream cheese
  • 2 tablespoons margarine
  • 1/4 cup milk
  • - salt and pepper to taste

How To Make cream cheese corn

  • Step 1
    Drain the corn and put in a saucepan with the chiles.
  • Step 2
    Cut the cream cheese into cubes and add to the corn. Add the margarine, milk and salt and pepper.
  • Step 3
    Heat on med-hi heat while stiring until the cheese and butter are melted and it is hot and bubbly.
